SPRING!

So i have been wanting spring to get here for the past few weeks! My time off from blogging i spent being outside in my garden, playing with my son and the dog, lounging in my lawn chairs listening to jazz! Doing TaeBo, Wii Fit and doing Bollywood dance work out as well as using my treadmill! And taking walks down to our lil wonderul park! Also Angie and i planted some of our seeds in her basement under a growing light! Before i post my picures of the past few wks! I wanna say a very big THANK YOU to Sara for handing me a huge box of clothes! Its helping me out a bunch! I am so close to be wearing the jeans and pants you gave me its unreal! Anyway my last couple of weeks in pictures! Here goes:

Jemput Jemput - JimputJimput a Malaysian snack!

So growing up my mum always made these as a snack/treat and most the time when it was cold and rainy outside! Its a savory fritter and boy is it tasty! Im not going to give ou measurements because those of you who follow my blog know its just not my thing... Plus when i learnt how to make this it was all done by looking at the batter!

Heres this list of what you'll need:

Plain Flour
Onion Powder
Garlic Powder
Fresh Flat Leaf Parsely
Chicken Breasts
Potatos
Onions
Fresh Red Chillies
Oil for Frying

What ou going to do:
Get a nice size bowl and put a few cups of flour into it add onion/garlic powder to taste set aside.
Roughly chop up our washed parsely, and red chillies and add to your flour
Dice your onions and potatos into small bite size pieces REMEMBER you want them small enough that they will cook quickly in the hot oil! Dice up your chicken breast into small pieces and add to your flour! Take your bowl over to your tap or water filter and add water to your batter and stir every so often keep adding water until you get a thickish cake batter! When you reach this consistancy your ready to start frying! Have your oil preheated to the point that when you drop your spoonful of batter into it, it seals the batter and doesnt absorb the oil! When your fritters have sealed and started to change colour turn them over and fry that side continue to cook until golden brown :) Once cooled and your able to handle them cut em up into chunks and serve them with sweet chillie sauce or even ketchup!

Heres some pics as always!

Now you can add kinds of things to this batter BUT dont put beef in your mixer! It will turn out VERY rubbery and tough! I like adding prawns/shrimp to this mixer along with the chicken!

BYOB! 100% Whole Wheat Sandwhich Bread

So last week i was asked by the boys for bread that they could make BIG sandwhichs from... (ive since shown them how to slice the bread and make a couple of sandwhichs if the bread isnt BIG enough! LOL) So i looked threw my awesome bread bible!

And found a wonderful recipe for sandwhich bread! I went to work on it and man it smelt so good and im just talking about the DOUGH! The best thing about this books recipes is the fcat that you make the dough and you can depending on which recipe your following you can store it in your fridge from anywhere btw 5 days to 14 days! Yep thats right get the hard work out of the way which is the dough making and its not even that hard! And then store it and you can have fresh baked bread everyday! The only thing i do differently to my bread dough is add Flaxseed :)

Creamy Divine Oven Baked Potato Bake And Honey-Soy Chicken

So as per usual i had no idea what to cook for dinner! And then i seen while pottering arund out in the garage i noticed my red skinned potatoes were looking a lil mehh so i thought on it abit and decided OOOOO Potato Bake! My mum use to make this all the time when growing up and usually served it with a spicey curry so it would dim down the curry lol!
Creamy Divine Potato Bake
however many potatos that will feed your family
garlic powder
onion powder
fresh ground black pepper
heavy whipping cream
some butter
your fav cheeses to melt on top!
Slice your potatoes real thin (skin on for us!)
now i took my pan and put olive oil in it and a some butter i heated the pan up on the stove first to combine these to, it was not HOT just enough to melt the butter! I then layered the potatos in once one layer was done i sprinkled the onion/garlic/black pepper over that layer and added some cream to it i kept doin this in layers until i was done with the potatos!
You will find the cream does not cover all over the potatos just hlf way down i would estimate, i turned the oven on to 350'F and slow baked the potatos with the lid on (it took about 2 and a hlf hrs all up) eventually the cream will bubble and boil and thicken up and help cook the potatos nicely. Just before serving add your fav grated cheese onto put the lid back on and place back in the oven for another 5 mins to melt the cheese! And serve!

MMM Ready To Serve!

Honey-Soy Chicken
Chicken Of Some Sort!
Soya Sauce
Honey
Seseame Seeds
Garlic Powder
Olive Oil
Drizzle your dish with olive oil, place your washed and patted dry chicken pieces. I think i used about 1 cup of soya sauce which i poured over the chicken and then i drizzled over the honey about hlf a cup, sprinkled garlic powder to taste then added a coupl eof teaspoons of seseame seeds and baked in the oven at 350'F for about an hr, turning every now and then and pouring the juices from the dish back over the chicken!

Simple and Easy!

Bok Choy Whole and Cut Up!

Sweet Chillie Sauce Asparagus

So last night i got to use my new pots and pans! I NEVER plan what im going to cook it just comes to me a couple hours before the boys are due home! So last night i was pottering around and decided hmmm im goin to lay out boneless skinless chicken thighs! Then i thought ooo sweet chillie asparagas will go great with the chicken (even tho i had no idea WHAT i was doing with the chicken!) Then i looked in my veggies draws and seen i had a bunch of BokChoy i needed to use before it went yellow! So that is what i had to work with....
So i washed the sparagus! I got a glass dish out drizzled some olive oil in it tossed em in got em coated a lil then i sprinkled em with garlic powder and onion powder then i added a few tablespoons on my fav sweet chillie sauce and taa daa that was done! (you bake em in the oven at about 365'F) So then what to do with the BChoy and Chook thighs.... so lets just slice up some onions oo and some fresh cloves of garlic! Hmm how about 4 red hot lil chillies.... Alright so lets get the pot and fry pan out and get these bad boys HOT! So i threw the smashed coarsely chopped garlic *INSERT SIZZLE HERE* ooo yea! mmm nothin beats the smell of fresh sizzlin garlic AHHH ok so then while the pot and pan is sizzlin away i divide up the onion, and coarsely cut up the bok choy! So i wash the choy and then add it to my hot sizzling garlic in my pot (Bok Choy if you havent cooked it before cooks down ALOT) I added a few dashes of soy sauce and put the lid on and turned it down to cook the lovely greens down! So in the pan i add my thighs to the sizzlin garlic mmm i put the lid of while it seers the one side of the thighs (alot of spittin goin on right here!) I check on the choy stir it a lil then add the onion (i know sounds backwards? but i like the taste of the onions this way :D) i put the lid back on and then turn the thighs over sprinkle the thinley sliced chillie over the top and the onions! throw the lid back on! At this point i was hunting in my fridge to see what else i could fine OH and the spraragus is in he oven this whole time! I found a can of light coconut milk so grab that and added about hlf a cup to my greens (bokchoy) and added the rest about a cup to my chicken! Hubby got home and while i was finishin up dinner he put 3 cups of brown rice in the rice cooker :) by the time everything was done cookin so was the rice! See how easy was that! And now for the pictures!
