~Lamb Bolognese - Bolognaise~

Never had Lamb before? This is a great way to try it! You can taste the lamb but its mingled in nicely with these delish flavours! I know alot of people do not like Lamb because it is such a strong flavour. We ate Lamb alot back home in Australia because it is such a cheap cut of meat compared to beef and chicken!
~Recipe~
couple pounds of ground lamb
a large onion sliced thinly
couple heaped tablespooons of garlic
couple of cups of diced tomatoes (mine were canned and already cooked in olive oil basil and garlic)
a handful of bayleaves
dryed rosemary
ground fennel
salt and pepper
pinch of chilli powder
1 cup of chicken stock
dried basil
and some thyme
Heat the pan with olive oil in it make sure its good n hot then toss in the garlic, bayleaves and onions saute them a little bit then add your ground lamb now i dont strain the fat of the lamb because to be honest there really isnt any fat in the ground lamb i buy its so lean, i have the stock for the sheer fact that the lamb often starts to stick and crust to the pan so the stock adds moisture and helps everything cook down nicely :)
Once the lamb has browned a little start adding your dry ingredients; basil, thyme, rosemary, fennel and chilli powder!
At this point the meat will start to get dry again go ahead and add the tomatoes to the mix turn the heat down to simmer because your goin to leave it for about hlf an hr checking on it every now and then but not taking the lid off the pan to often as you want all the herbs to cook slowly into the meat! After hlf an hour turn the heat back up to a medium to high heat (in btw) and add the rest of the chicken stock stir throughly, give it a taste and see if you need to add anymore herbs to it if so nows the time because its going to cook another 15-20mins now while your pasta is finishing boiling! Add your S&P if there isnt enough sauce to your liking take a ladel full of the pasta water and add it to your sauce! Now serve with pasta and freshly grated parmesan cheese or with out!
